Traditional Balsamic Vinegar of Modena DOP must be produced with 100% cooked acetified grape must without adding aromatic substances, caramel, coloring, preservatives etc. The designation “Affinato” means that it must be aged a minimum of 12 years. Gocce Traditional Balsamic Vinegar of Modena DOP, Affinato has been aged for 15 years.
This balsamic is great with mixed salads, raw or cooked vegetables, roast or grilled meat, fish, cheese, pasta dishes such as tortelloni or risotto. It compliments nicely desserts such as strawberries, ice cream and cheesecake.

The Consortium of Traditional Balsamic Vinegar of Modena DOP is the body in charge of the tasting of the product to verify that it conforms to the standards of quality, and is also responsible for the bottling of the product.
Traditional Balsamic Vinegar of Modena DOP is made with cooked must only obtained from grapes grown in Modena 's area, aged according to the tradition in wooden barrels with annual transfers into different barrels so that to acquire the flavors of the different woods (oak, chestnut, cherry wood, ash, mulberry, juniper, acacia...).
